Regaining the soybean quality lead

Objectives:
- Investigate the genetic and biochemical factors responsible for the comparatively small seed size, low sucrose content, and fragile seed coats of Canadian food-grade soybeans relative to their modern Asian counterparts.
- Integrate improved seed quality traits into Canadian soybean germplasm, generate recombinant inbred lines, and distribute germplasm to public and private sector breeders.
Expected Impacts:
- Improving critical food-grade soybean quality traits (larger seed size, higher sucrose content, more durable seed coats) will help Ontario farmers earn higher premiums in quality-driven Asian markets.
- New market opportunities: access to superior food-grade soybeans will allow Ontario growers to tap into new premium market segments, leading to expanded international trade opportunities.
Scientific Summary:
This project will focus on rebuilding Canada’s competitive edge in food-grade soybean quality. Food-grade soybeans have historically provided Ontario growers with an excellent opportunity to capture additional farm gate revenue. Global demand for soy foods is rising rapidly, driven by health-conscious consumers and plant-based protein trends, and Ontario’s food-grade soybean industry is poised to boom.
Ontario food-grade soybeans have historically offered an enticing value proposition: excellent quality at a fair price. However, this quality advantage has been shrinking. Over the past two decades, the quality of the global competition has improved, and buyer expectations have evolved towards larger, sweeter, and less-damaged soybeans. We aim to improve the quality of Canadian food-grade soybeans and Canada’s leadership position in food-grade soybean quality.
To achieve this, we intend to: 1) investigate, through genetic and biochemical studies, why Canadian food-grade soybeans have smaller seed size, low sucrose content, and fragile seed coats compared to their modern Asian competition; and 2) improve the quality of foundational Canadian food-grade soybean germplasm through incorporation of quality traits from modern Japanese varieties. Results from the project will be shared with the Canadian soybean research community and germplasm will be distributed freely to both public and private sector breeders. We hope that our work on this and future projects will help to revitalize the food-grade soybean sector, enhance the reputation and marketability of Canadian soybeans, and ultimately result in higher prices and premiums for Ontario soybean growers.
